Let the year end with an explosion of flavor!
Surprising combination of balsamic vinegar, strawberries, basil and "kletskoppen"(Belgium cookies)
Ingredients per person
80 grams of strawberries
3 tablespoons (frozen) mixed red fruit
2 tablespoons balsamic vinegar
1 1/2 tablespoons (bastard) sugar
Star anise
2 kletskoppen (Belgium cookies)
Scoop of vanilla ice cream
A few basil leaves
Black pepper
HOW TO COOK
Keep a few strawberries whole and cut the rest into small pieces. To this, add 1 tablespoon of balsamic vinegar and half a tablespoon of sugar and leave to soak (at least 10 minutes).
For the jelly; Put 3 tablespoons red fruit, tablespoon balsamic vinegar, tablespoon sugar and the star anise together in a saucepan and bring to a boil. Let this boil down to the desired thickness, you can add a leaf of gelatin if necessary.
Presentation; start with a cookie and place basil leaves on top. Place a scoop of vanilla ice cream on top and then another cookie on top. Finish with the marinated strawberries and spoon the jelly around it.
Delicious to grind some black pepper on top.
