ZUCCHINI SATEY FROM THE BBQ


Ingredients for 4 skewers

1 zucchini

1 garlic clove

1/2 lime

2 teaspoons Provencal herbs

3 tablespoons extra virgin olive oil

Salt and pepper

4 skewers (TIP: If you use wooden skewers, soak them in some water before using them)


HOW TO


Cut the zucchini into slices about 1 cm thick, keeping 3 per person. Chop the garlic finely. Mix together the olive oil, lime juice, garlic, Provencal herbs and salt and pepper and marinate the zucchini slices in this for at least 15 minutes.

Thread the zucchini slices onto skewers and grill them on the BBQ. Turn regularly until done.


Delicious with a yogurt sauce made of extra virgin olive oil, lime juice and zest, Provencal herbs and salt and pepper. I use Greek yogurt for this, it is a bit firmer.
